Preventing Food Allergens at Camp

Interested in eliminating food allergens at your camp?  Camp Zeke, a Jewish overnight camp that celebrates a healthy and active lifestyle, prides themselves on the policies and procedures they have in place to keep their campers safe from the following six allergens: gluten, dairy, eggs, fish, nuts and sesame. Executive Director Isaac Mamaysky worked closely with their Executive Manager, Allergy Chef and Dietitian to create an allergy procedure manual that guides all food service at camp as well as when campers venture out of camp. Check out the highlights here. If you’d like a copy of the manual, please feel free to email Executive Manager Laurie Epstein.
